Description

From the 35 year-old Chenin Blanc vines grown on the Willard Farms Vineyard, set on volcanic terroir laid over basalt bedrock, with topsoil composed of the Northwest’s classic Missoula Floods sediment. With an eye to attaining the right balance of ripeness and acidity, the harvest was made in two passes, set five days apart. The first pass yielded moderately ripe fruit with vibrant acids, while the second pass was riper, deeper, and more focused on skin development. Fermented with a pièd de cuve from the native yeasts, which was then used to start the full fermentations in puncheon and barrel. Fermented to full dryness. 125 cases produced.
