Piave Vecchio is pasteurized cow’s milk cheese named after a river by the same name. It is DOP protected and the only authentic Piave Fresco produced in the Dolomites area of the Belluno province of Veneto.  Piave can be used on your cheeseboard to pair with Chianti or an acidic white wine, hoppy ale, or used where you might use Parmigiano Reggiano.  Serve with crusty bread and thin prosciutto slices.
